Gingerbread cookies

recipe :

  • 70 g butter
  • 65 g brown sugar
  • 1 pieces egg yolk
  • 350 g flour
  • 1 teaspoon baking soda
  • 3 teaspoon ground ginger
  • 50 g molasses

Preparation :

  • Preheat oven to 165c . Grease three oven trays.
  • beat butter, sugar and egg yolk in a small bowl with an electric mixer until smooth. Stir in sifted dry ingredients and molasses to a soft dough. Knead dough on a floured surface until smooth. Roll dough between sheets of parchment paper until 1/8-inch thick. ( Refrigerate 1 hour ) .
  • Using a 5 1/4-inch gingerbread-man cutter, cut out shapes from dough, place on trays about 1 1/4 inches apart.
  • Bake gingerbread for 10 minutes or until lightly on trays.
  • Meanwhile, make Royal icing.
  • Spoon icing into a pastry bag fitted with a small round tip, decorate shapes as desired.
